Case Paolin San Carlo 2020 is an organic red wine from the Montello hills in Veneto, combining the power of Cabernet Sauvignon and Merlot with the finesse of Cabernet Franc. Made from high-altitude vineyards with excellent sun exposure, it has the structure and balance of a wine built for both immediate enjoyment and cellaring.

Proefnotities
In the glass, it shows an intense ruby-red colour. The nose is layered and inviting, with ripe red and dark berries such as raspberry and blackberry, lifted by spice, vanilla and subtle oak notes. On the palate, it is full-bodied, round and persistent, with soft tannins and a long, harmonious finish. The combination of freshness, structure and polished oak influence gives it real depth, and it should age well for several years, developing even more complexity over time.

Productie
San Carlo comes from the Montello hills in Treviso, where elevated vineyards and strong sunlight help the grapes achieve full ripeness while preserving balance. The wine is made from Cabernet Sauvignon, Merlot and Cabernet Franc, with the parcels vinified separately before blending. It is then matured for 12 to 14 months in French barriques, followed by further ageing in large oak casks and in bottle, resulting in a wine with both power and refinement.

Eten & Serveren
An excellent match for grilled meats, game and mature cheeses. Serve at 18-20°C, and decanting is recommended if you want to open up its aromas and soften the texture, especially in its youth.
