The grapes undergo ten days of maceration before fermentation begins in steel tanks at low temperatures, a method intended to build colour and preserve aroma while avoiding harsh tannins. The wine then spends ten months in oak barrels, 30% of which are new, followed by five months in steel tanks before bottling.
